Canoe Trip Cookies Pecan Cookies
To impress a lady friend I conjured up these delights as a cookie that would travel well. You see, I was not aboard the canoe and had to track the group through miles of forest. I found her, she loved them
Ingredients
1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/4 teaspoon cinnamon
1 teaspoon baking soda
1 cup pulverized pecans
1/2 cup instant oats
1/2 cup pecan halves
1. In a large mixing bowl cream butter with an electric mixer. Then add sugars and blend thoroughly. Add egg, vanilla and mix until batter is smooth.
2. In a small mixing bowl sift together flour, baking soda and cinnamon. Gradually add dry mixture to batter and blend until combined.
3. Using a mortar and pestle grind pecans into dust .
4. Mix oats and pecans to batter
5. Roll the dough into 1 inch balls, place on cookie sheet and bake at 350 for 8 to 10 minute until golden brown.
