I have always preferred tea to coffee. As such scones were always a perfect tea treat. But they're just to dry and not quite sweet enough for my taste. So how to make a scone that is bit more moist and sweet without making it cake?
1 In a large electric mixing bowl sift together flour, sugar, baking soda and baking powder. Mix in the butter until dry and crumbly.
2 In large measuring cup add milk, egg yoke and marmalade. Beat with whisk.
3 Add the milk mixture to the flour and beat with an electric mixer until moist. Blend cranberries in by hand. Kneed the dough slightly then for into mounds of a desired size.
4 Bake on a cookie sheet at 350 for 8 to 10 minutes or until the tops start to brown.
1/3 cup butter
2 tablespoons sugar
2 cups flour
2 teaspoons powder
1/8 teaspoons baking soda
1/4 cup milk
1 egg yoke
3 tablespoons orange marmalade 3/4 cup dried sweetened cranberries
